Move over Crunch bar! How about a yogically-sophisticated, healthy, and sooo much more delicious alternative? These healthy raw cacao truffles are packed with concentrated chocolate flavor along with a delicate crunch that's perfect when you need a little texture.

 If you aren't familar with the glorious benefits of raw cacao powder, be sure to check out my latest post on that very subject! Small word of warning...you really must like chocolate if you're going to like these truffles. It's got a huge punch of concentrated chocolate flavor, a subtle sweetness, and delicate little crunch to satisfy your crunch bar craving.

If you like your chocolate a little sweeter, I will sometimes add a bit more honey, or a small amount of monkfruit sweetener if I don't want anymore added sugar in a recipe and can't use a liquid, though I usually stick with the real thing rather than non-caloric sweeteners. I’ve also used date paste when I”m not in the mood for a honey flavor. Totally up to you. Start with a very small amount until you feel it's sweet enough. There are also numerous additions you can use rather than just quinoa (hempseeds, coconut, raisins, goji berries, nuts, chia).. but I wanted the quinoa to really shine here. INGREDIENTS:

 1-2 Tbsp raw quinoa
3.5 Tbsp coconut oil, melted (I used this)
1/2 cup raw cacao powder (use nutriyogi12 for 12% off)
2 Tbsp date paste (raw honey or combo of both)
1/2 tsp vanilla extract
1/2 tsp sea salt
 

 

Toast quinoa in a pan on low for about 4-5 minutes. Set aside to cool. Combine first 4 ingredients in a large bowl until well combined. Add quinoa and mix through. If dough feels dry, feel free to add a pinch more coconut oil. Form into small balls and place onto a tray line with parchment paper. Chill in fridge for 30 minutes and viola! Now go wrap them up and impress somebody!
