Gluten-free Banana Chia Power Muffins

Gluten free banana chia power muffins

One of my favorite post yoga power snacks! It also gives me a ton of energy just before a workout.

Ingredients:

 

Dry Bowl
 
1 cup coconut flour
1 cup buckwheat flour (I’ve also used ½ almond flour &½ brown rice flour)
3 Tbsp chia seeds
1 tsp baking soda
 ½ tsp fine sea salt

 

 

Wet Bowl
 
½ cup coconut sugar
¼ cup melted coconut oil
1 ⅔ cup mashed banana (about 3 large ripe bananas)
3 large eggs lightly whisked
  ¼ cup organic milk (almond or coconut also work)
 ¼ cup organic plain yogurt

In large mixing bowl, combine coconut sugar and coconut oil and beat with mixer at medium speed until well blended. Add remaining ingredients. Add blended dry bowl ingredients to wet ingredients and stir until combined.

Preheat oven to 350. Line muffin tin with cups or grease with melted coconut oil. Combine all of the dry bowl ingredients in a medium mixing bowl and stir with a whisk. Set aside.

Place heaping Tbsp fulls into muffin tins (about ½-¾ full).  Batter will be thick, don’t freak out. Bake 20 minutes. Let sit 5 minutes before transferring out of pan and onto cooling rack.


Other potential add ins: chopped walnuts, ground flaxseed, dark chocolate chips
