Pumpkin Power Cookies

The batter in these cookies isn’t too sweet, but that’s where the add-ons come in. Feel free to use your favorites, ie pumpkin seeds, chia, flax, carob chips, or any nut you like. This will help curb hunger, making them the perfect on-the-go snack! Today, I used raw walnuts and dark chocolate chips. Who needs an energy bar when you have these?

The goods

1 tbsp coconut oil, melted (to grease cookie sheet)
1.5 cups almond flour
1/2 cup coconut flour
1 tsp cinnamon
1/2 tsp salt
 ½ tsp ground nutmeg
 ½ tsp baking soda
 ½ cup (1 stick) organic butter
1 cup coconut palm sugar
2 eggs lightly beaten
1 tsp vanilla
1 cup canned pumpkin
1 cup chopped walnuts
1 cup dark chocolate chips

Preheat oven to 350. Grease cookie sheet w melted coconut oil. In medium bowl, combine all dry ingredients, (flours through baking soda). In large bowl beat butter and coconut sugar. Add eggs, vanilla, and pumpkin. Stir until combined. Add remaining ingredients. Drop in Tbsp sized balls onto cookie sheet.

Bake 15 min.
