Sweet Potato Curry Soup in the Slow Cooker

Yep, it’s another slow cooker recipe.  Dairy-free Sweet Potato Soup in the Slow Cooker doesn't call for much fuss at all. Just throw a bunch of stuff into your pot, cover with a lid, and voila...you have an amazing vitamin & fiber-packed, anti-inflammatory, heart-healthy, delicious meal. For this soup, I do take that extra step and use my hand blender to blend it before adding the greens. Comes out great!

The Stuff

6 sweet potatoes (unpeeled), 1 inch cubes
1 large sweet onion roughly chopped
13.5 oz can coconut milk such as native forest
32 oz organic veggie broth
1 tbsp garlic powder
2.5 tbsp curry powder
 ½ tsp Garam Masala (Indian spice)
1 tsp fresh ginger, minced
large dash white pepper
sea salt to taste
1 large bunch organic greens, (spinach, Swiss chard, collards or whatever you like) washed and finely chopped.

Place all items (except greens) in order listed into slow cooker and heat to high setting (4 hrs). Remove from heat for a few minutes. Blend with hand blender until smooth ( I like to leave mine a bit chunky). Finally, add greens while still hot, and mix through. Season with a bit of additional salt if desired.
